STIRRING OFTEN. REDUCE HEAT AND SIMMER UNCOVERED 20 MINUTES,
STIRRING OFTEN.

1-8.1 oz. PACKAGE LAURIE'S KITCHEN PASTA FAGIOLI SOUP MIX
6-CUPS WATER
1-lb. ITALIAN SAUSAGE
BASIL PESTO:
1 CUP FRESH *BASIL LEAVES, PACKED
2 TBSP. GRATED PARMESAN CHEESE
1/4 CUP OLIVE OIL
3 TBSP. PINE NUTS OR WALNUTS
3CLOVES GARLIC, CHOPPED
*MAY SUBSTITUTE FRESH SPINACH
Directions:
IN A 4-QUART SAUCE PAN, BROWN SAUSAGE AND DRAIN. RETURN TO PAN
AND ADD WATER. WHISK IN SOUP MIX AND BRING TO A BOIL. REDUCE HEAT
AND SIMMER 20 MINUTES STIRRING OFTEN.
FOR THE PESTO:
PLACE BASIL LEAVES IN FOOD PROCESSOR AND WHIP UNTIL WELL CHOPPED.
ADD PARMESAN CHEESE, NUTS AND GARLIC. WITH PROCESSOR RUNNING,
ADD OLIVE OIL SLOWLY AND BLEND UNTIL UNIFORM. SPOON INTO BOWLS OF
PASTA FAGIOLI AND ENJOY!
