6 cups chicken broth
1 28-oz. can crushed tomatoes in puree
cooking DIRECTIONS
Bring broth to a boil in a 2 or 3-quart non-aluminum pot. Add Soup Mix to broth. Add canned tomatoes and bring soup to a boil. Reduce heat and simmer slowly covered for twenty minutes and serve.
inventive VARIATIONS
OPTION 1: Add 3/4 lb. fresh shrimp, shelled and de-veined. Simmer 2-3 minutes until opaque. Garnish with 1/2 cup crumbled feta cheese.
OPTION 2: For a cream of tomato soup, gently heat 2 cups cream (or buttermilk for a more piquant taste) and add a tomato base along with fresh basil for garnish.
OPTION 3: For a spicier soup, add 1/4 tsp. cayenne pepper.
