The original soup that started the company, add Kielbasa sausage for great flavor. For best results prepare a day ahead and serve a crowd! Vegetarians make this soup without the meats and add smoky barbecue sauce for a wonderful substitution.

Bouquet Garni (bundled herbs, leave tied)

12 cups water
1 Tblsp. salt
1 smoked ham hock
1 28-oz. can Italian tomatoes, chopped
2 cups celery, chopped
2 cups onion, chopped
1 green pepper, chopped
2+ cloves garlic, minced
freshly ground pepper
1 lb. smoked Kielbasa sausage, sliced
2 boneless chicken breasts, sliced into small pieces while raw or slightly frozen
cooking DIRECTIONS
Rinse, drain and pick over beans. Place beans in an 8-qt. pot with water, salt, ham hock, and bouquet garni. Bring to a boil, reduce heat and simmer covered for 3 or more hours. Add tomatoes, onions, celery, garlic and green pepper to pot. Bring back to boil, reduce heat and simmer covered for 1-1/2 hours. Add pepper, sausage and chicken and simmer uncovered for 40 minutes. Discard bouquet garni before serving.
