Chipotle Bread Spread and Dip Mix
Some like it a little hot! Real Mexican chipotle peppers give this delicious spice mix a bit of heat. So versatile that we have constant "aha" moments when it comes to finding uses for this spice mix!
Blend with sour cream for a dip
mix with mayonnaise for a sandwich spread.
Try avocado, tomato slices, sprouts and Chipotle mayo on whole grain bread.
Great as a rub for barbecued meat.
Chipotle Bread Spread and Dip Mix Recipes:
For Sandwich Spread:
Blend contents of packet with one cup sour cream mixed with one cup of mayonnaise. Allow to stand 30 minutes; spread on good bread. Excellent on a turkey or chicken with avocado sandwich.
For Dip Mix:
Blend contents of packet into one cup sour cream mixed with one cup mayonnaise and allow to stand 30 minutes or refrigerate overnight. Serve with cut-up vegetables such as sliced red and yellow peppers and broccoli flowerets.
For Chipotle Toast:
Stir contents of packet before measuring out 2 1/2 teaspoons of spice mix. Blend the 2 1/2 tsp. spices with one cup softened butter, and allow to stand 30 minutes. (Seal remaining spices for another use.) Spread on French or other good bread and toast under broiler about 3 minutes until browned on edges. Serve in a bread basket with dinner.
Chipotle Orange Juice Glaze for Chicken, Pork or other Meat
2 cups fresh orange juice
5 tablespoons cinnamon honey
1/4 cup soy sauce
2 tablespoons finely grated orange rind
2 teaspoons chipotle bread spread and dip mix
Boil all the ingredients, except the grated orange rind, in a heavy, medium saucepan until reduced to 2/3 cup, about 20 minutes. Mix in grated orange rind Grill chicken, pork or other meat until cooked thoroughly. Brush meat all over with glaze and grill 2 minutes more.
Chipotle Parmesan Dip
1 cup Mayonnaise
1/2 cup sour cream
3 cups Parmesan cheese
2 tsp. Worcestershire sauce
1 packet chipotle bread spread and dip mix
1 purple onion finely chopped
9 slices bacon, fried crisply and crumbled
Mix all ingredients and spread on rye bread rounds. Broil for 3 minutes or Bake at 400 degrees for 10 minutes until brown on the edges. Arrange on a platter and serve hot. This recipe can also be placed in a small casserole and baked at 400 degrees for 30 minutes and served with crackers or bread.
Chicken Salad Appetizer or Luncheon Salad
4 Chicken Breast halves, simmered gently 15 minutes and cooled.
1 cup sliced celery
1/2 cup golden raisins
1 small yellow pepper diced
1/4 cup sliced almonds
6 pieces bacon fried crisply and crumbled
1 packet chipotle bread spread and dip mix
(For dressing: 1 cup mayonnaise, 2 T. fresh lime juice, 2/3 cup Mango Chutney, 2 Tablespoons )
Cut up chicken breast, add additional ingredients and stir in dressing. A delicious salad served on bread squares or Belgium endive lettuce for an appetizer.
Chipotle Ranch Sauce/Dressing
1 cup mayonnaise
1 cup sour cream
1/2 cup chopped fresh cilantro
6 tablespoons fresh lime juice
4 green onions, chopped (optional)
1-2 tablespoons chipotle bread spread and dip mix
Whisk all ingredients to blend. Season with salt and pepper to taste. Great on top of hamburgers or as a salad dressing.
