Toasted Almond Packet
fresh ADDITIONS
2 Tablespoons butter or margarine
6 cups chicken broth
1 box frozen, chopped spinach
cooking DIRECTIONS
Melt butter in a 2 or 3-quart pot. Add Soup Mix and toss lightly to coat vegetables. Add chicken broth and spinach and bring to a boil. Reduce heat and simmer covered for 15 minutes. Garnish each serving with a sprinkle of Toasted Almonds.
inventive VARIATIONS
OPTION 1: If you prefer, a box of frozen asparagus may be substituted for the frozen spinach and 1/2 to 1 cup of milk or cream added to finish the soup.
OPTION 2: Add half a pound of scallops for the last five minute of cooking time. Finish with cream.
