Pasta Fagioli (Fazuel)
Ingredients
- 1 lb. dried navy or sm. white beans
- 2 qts. water
- 1 beef bone
- 1/4 c. olive oil
- 1 tsp. dried basil
- 1/2 tsp. black pepper
- 1 c. beef stock
- 1 lb. pasta or macaroni
- 1 tsp. minced parsley
- 2 carrots
- 2 stalks celery
- 3 tomatoes or tomato sauce
- 2 cloves garlic, minced
- 2 tsp. salt
Directions
Heat oil, stir in garlic; add basil, salt, stock, tomatoes and bring to boil. Also parsley. Pour into beans. When beans are nearly done, add carrots and macaroni. Adjust liquid to consistency you want.
