Easy Minestrone Soup
Ingredients
- 1/2 lb. ground beef
- 1 c. chopped celery
- 1 c. chopped onion
- 1 c. diced carrots
- 1 clove minced garlic
- 1/4 c. vegetable oil
- 1 can Italian white kidney beans, drained
- 1 (28 oz.) can tomatoes
- 8 c. beef stock
- 1/2 tbsp. parsley flakes
- 2 c. shredded cabbage
- 1 c. uncooked spaghetti, broken in pieces
- Salt & pepper to taste
- Grated Parmesan cheese
- Brown beef, onions, celery and garlic in oil. Add vegetables, stock and spices.
Directions
Bring to a boil and let boil for 30 minutes. Add cabbage and spaghetti. Simmer 20 minutes. Sprinkle with Parmesan cheese. Add water if necessary.
