Perfect with a grilled cheese sandwich or serve it more elegantly with the addition of shrimp and feta cheese. Additions of chicken broth and canned tomatoes create this home style soup.

fresh ADDITIONS
6 cups chicken broth
1 28-oz. can crushed tomatoes
2 Tbsp brown sugar
Optional: 2 cups cream (heavy or half & half)
cooking DIRECTIONS
In a 4-quart, non-aluminum pot, bring broth to a boil. Add soup mix, canned tomatoes and brown sugar. Return to a boil, reduce heat and cover. Simmer slowly for 20 to 30 minutes and serve. Add cream, if desired.
inventive VARIATIONS
OPTION 1: Add 1/2 lb. fresh shrimp, shelled and de-veined. Simmer 2-3 minutes until shrimp turn opaque. Garnish each serving with crumbled feta cheese.
OPTION 2: For an Italian bread soup, add 2 cups croutons or day old bread cubes, either with or without the cream. Allow to simmer 10 minutes until bread it thoroughly absorbed into soup and serve!
