4 cups chicken broth

Italian Wedding Soup Recipe Directions: To Prepare the Meatballs:
Push the turkey sausage out of the casings, discard casings. Use two knives and chop/slash the whole grain breadcrumb/herb mixture and egg white into the ground turkey. Form small meatballs by hand, about 30-35. Set aside in refrigerator until ready to add to the soup. To Prepare the Soup:
In a 4-quart pot, sauté onion in oil for 2-3 minutes. Stir in contents of the larger soup seasoning packet, about 30 seconds. Add broth and bring to a boil. Add meatballs and simmer 20 minutes covered. Bring heat up to a boil and add tiny pasta and escarole. Reduce heat to a simmer, cover and cook 10-15 minutes. Inventive Recipe Variations: Expand this Italian Wedding soup as the family grows. Simply add 1/4 to 1/2 pound more ground turkey and another egg white to multiply the meatballs.
