1 Tblsp olive oil
1 lb. mild Italian sausage
12 cups beef broth
2 medium zucchini, diced
1 28-oz. can chopped tomatoes
1 cup red wine
cooking DIRECTIONS
Crumble and brown sausage in oil in a 6 or 8-qt. pot. Rinse, drain and pick over lentils. Add lentils, contents of vegetable packet and broth. Bring to a boil, reduce heat and simmer covered for 1 hour, stirring occasionally. Add zucchini (no need to peel), tomatoes and wine. Simmer uncovered for 15 more minutes.
inventive VARIATIONS
A box of frozen, chopped spinach may be substituted for the zucchini.
